MATC offered classes on how to operate a food truck over the summer. The Chair of the Culinary Arts Department, Chef Paul Carrier says the department is “in the process of potentially developing a one semester long, seven credit Technical Diploma named ‘Food Truck Operations’ in the next year. After completing the credits, students will receive a digital badge credential called “Food Truck Operations Essentials.”
Over the summer break, MATC had a food truck on campus parked under the Bridge from the S Building to the M Building and students and staff eagerly lined up to sample the food. There were three classes taught by Chef Jason Alston. These classes were part of a pilot to test student interest in learning food truck operations.
Chef Paul describes this class as a hands-on learning experience where students decide the menu. He said, “The food produced was leftover raw product from the various Culinary Arts Labs accrued during the school year, so no funds are additionally for food product for the class.” Chef Paul says the students who enrolled in the class are interested in operating a food truck at some point in their career.
